Potato Yam Soufle


One yam

Four medium red potatoes

2 tablespoons of Butter

2 tablespoons of Olive oil




Peel yam and potatoes

Cube and cover to boil for twenty minutes

Drain water

Mash yam and potatoes in large bowl

Add butter and olive oil

Salt and pepper to taste

Pour contents into Pyrex baking dish

Bake at 350 degrees for 30 minutes or until browned

  1. Yum. You will have to bring me a taste.. I am struggling to read the last 27 pages of “As Close As…”It just gets more difficult as it goes on, as you know. I only continued reading because you made it sound so good. I could have skipped it with less heartache. Maybe too close to home.That’s why Steve declined to read “Some Hell”
