Ingredients
1 and ¼ pound ground turkey
1/2 cup Marinara sauce
¼ whole Eggplant cut into small cubes
¼ cup Celery
Salt
Pepper
8 ounces of Gluten free pasta
Brown up eggplant cubes and celery in canola oil until soft in a frying pan. Add ground turkey and continue to brown until no blood is visible. Season with salt and pepper and whatever spices you enjoy for a meaty Bolognese flavor-oregano, basil, parsley, etc. Now you can gently add marinara sauce. The juices from the ground turkey combined with the marinara sauce make a delectable creation. Let simmer for 5 minutes .
Boil the pasta per instructions. After you drain the pasta place into a large serving bowl. Then take the above ingredients and pour over the pasta. Stir and your gluten free fodmap diet free food is ready. Should serve 4 so you can incrementally increase above for additional guests.
Serve with parmesan cheese and vegetable and you have a gourmet meal.
